He cut his teeth on the art of French fare in the cuisine\u2019s native country, and opened his restaurant, Spring, in Paris to rave reviews. While Le Coucou is his first U.S. kitchen, a menu chock-full of French classics means it isn\u2019t too far from Rose\u2019s bread and butter.<\/p>\n<p><a href=\"http:\/\/www.luxxu.net\/blog\/\" title=\"\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-2776 size-full\" src=\"http:\/\/www.luxxu.net\/blog\/wp-content\/uploads\/2016\/07\/Take-a-look-at-Roman-Williams%E2%80%93Designed-Le-Coucou-Restaurant-table-e1468578591947.jpg\" alt=\"Take a look at Roman &amp; Williams\u2013Designed Le Coucou Restaurant table\" width=\"640\" height=\"800\"><\/a><\/p>\n<p>For Alesch, the stripping-down process is a good way to get to know the soul of a place. \u201cSee what emerges when everything superficial falls away; then when you\u2019re adding things back, if you\u2019re really listening, you\u2019ll see if it feels true,\u201d he says.<\/p>\n<p><a href=\"http:\/\/www.luxxu.net\/blog\/\" title=\"\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-2777 size-full\" src=\"http:\/\/www.luxxu.net\/blog\/wp-content\/uploads\/2016\/07\/Take-a-look-at-Roman-Williams%E2%80%93Designed-Le-Coucou-Restaurant-furniture-e1468578705118.jpg\" alt=\"Take a look at Roman &amp; Williams\u2013Designed Le Coucou Restaurant furniture\" width=\"640\" height=\"804\"><\/a><\/p>\n<p>One of the key elements they introduced to the space is a hand-painted mural by New York\u2013based painter Dean Barger. For four months, Alesch and Sandefer researched and incubated the idea before stumbling upon the works of 18th-century French landscape painter Hubert Robert, whose moody, expressive art proved the perfect jumping-off point. From there, it was just three short weeks from the first brushstroke to dried paint.<\/p>\n<p><a href=\"http:\/\/www.luxxu.net\/blog\/\" title=\"\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-2778 size-full\" src=\"http:\/\/www.luxxu.net\/blog\/wp-content\/uploads\/2016\/07\/Take-a-look-at-Roman-Williams%E2%80%93Designed-Le-Coucou-Restaurant-furniture-1-e1468578800298.jpg\" alt=\"Take a look at Roman &amp; Williams\u2013Designed Le Coucou Restaurant furniture\" width=\"640\" height=\"804\"><\/a><\/p>\n<p>The decorative elements, Alesch explains, were all chosen to evoke emotion and \u201ccreate a dreamscape that is not overly specific about a place and time in history.
